Role Overview:

We are seeking an experienced and motivated Cook to lead our kitchen and food preparation operations. The ideal candidate will be responsible for examining ingredients, preparing and cooking sushi rice, seasoning components, and ensuring all culinary preparations meet our exact quality standards. This is a key kitchen role that ensures Miki Beautiful Sushi continues to deliver outstanding quality, taste, and consistency.

Responsibilities include but are not limited to:

• Examining all ingredients to ensure they meet the high-quality standards required for sushi preparation.
• Regulating temperatures of rice cookers and other specialized sushi-making equipment to ensure optimal conditions for sushi rice and ingredients.
• Preparing and cooking sushi rice, fish, and other ingredients with precision and care.
• Seasoning sushi components during preparation to achieve the perfect balance of flavours.
• Portioning and assembling sushi, sashimi, and related dishes with attention to detail and consistency.
• Storing ingredients and prepared sushi in temperature-controlled facilities to maintain freshness and prevent spoilage.
• Planning menus and estimating food requirements to maintain an efficient and varied offering of sushi dishes.
• Training other kitchen staff and apprentices in sushi preparation techniques and standards.

Qualifications:

• Certificate III in Commercial Cookery (Preferred but not mandatory).

Other Requirements:

• At least 2 years of experience as a Cook in a similar fast-paced restaurant environment.
• Knowledge of Japanese cuisine and sushi preparation techniques is preferred.
• Strong understanding of food safety and sanitation practices.
• Excellent communication and teamwork skills.
• Ability to work efficiently under pressure and in a fast-paced environment.
