Position: Chef and Cook

Salary: $80,000 per annum plus superannuation

Hours: 38 hours per week

Mode: Full-time

Location: 98 Kent Road Pascoevale

Plan, direct, supervise and coordinate all food preparation and cooking in the kitchen

• Prepare, season and cook all types of food, including woodfired pizza and dishes for special guests and functions
• Bake, roast, boil and steam meats, fish, vegetables and other foods, and control the temperature of the woodfire oven, grills and other cooking equipment
• Weigh, measure and mix ingredients; wash, peel, cut and prepare fruit and vegetables; carve and trim meats
• Check food is properly cooked and meets quality standards by tasting, smelling and inspecting it
• Portion, garnish and present dishes and desserts, and design decorative food displays
• Plan and develop menus and recipes, allowing for seasonal produce and expected customer numbers
• Analyse recipes and price menu items based on food, labour and supply costs
• Estimate food use and supply costs; order supplies and help with kitchen budgeting and purchasing
• Check the quantity and quality of deliveries and stock
• Set production schedules and staffing levels, and help recruit and hire kitchen staff
• Train cooks and kitchen staff in food preparation, presentation, new techniques and equipment
• Follow and enforce food safety, hygiene and workplace health and safety standards
• Inspect food preparation areas, equipment and supplies; arrange equipment repairs and purchases
• Record production and operational data on the required forms
• Communicate with front-of-house staff before and during service

Requirements:

Chef: At least 1 year of relevant work experience, plus a Certificate IV in Commercial Cookery or equivalent work experience

Cook: At least 1 year of relevant work experience, plus a Certificate III in Commercial Cookery or equivalent
